Single Serving Quinoa Kale Bowl

Today I was rushing around and needed a quick lunch. I ravaged through my kitchen and came up with something that I thought would turn out questionable but ended up being delicious…going to be doing this again on purpose next time 🙂 Here’s what you’ll need:

¼ cup of uncooked quinoa
¼ cup of corn (canned is what I used)
1/2 cup of chopped up kale
1 teaspoon of butter
Pinch of salt, pepper, and onion powder
Sprinkle of any shredded cheese you have at home

First I made the quinoa- I used about ¾ cup of water. I put the kale in a pasta strainer and put it over top of the steam from the quinoa.

When the quinoa is done, I mixed the steamed kale, corn, butter and salt, pepper, onion powder. I mixed it up well then put into a bowl.

I sprinkled the cheese on top.

This was SURPRISINGLY delicious. And easy. And super healthy. Honestly, this is going to be my go to when I’m in a lunch bind to avoid eating fatty foods. You could also add whatever other veggies you have in the kitchen. This would be good with black beans, peppers, tomatoes- go CRAZY.
