Mixed Berry Scones (150 calories a scone!!)
So after posting my blueberry bundt recipe, I wanted something new to bake. I needed something to do on a self imposed Saturday night in; clearly baking is my go to. I thought blueberry….hmm I’ve got a bag of frozen mixed berries in the freezer- what can we do with these. Breakfast being my favorite meal of the day, I decided to scone it up. I took to the web to find a (healthy-ish) breakfast food so my fam and I could indulge in the AM. Here’s what you’ll need:
3/4 cup cold milk (any will do, I suggest not fat free)
1/4 cup sugar
2 tsp vanilla extract
1 large egg
2 cups all purpose flour (you could break this up into 1 cup white, 1 cup whole wheat- it’s up to you)
1 tbsp baking powder
1/2 tsp salt
3 tbsp CHILLED butter cut into small pieces
1 cup mixed berries (or just on kind, really up to you! I’m gonna try this with chocolate chips as well 🙂 or maybe cinnamon chips! Endless possibilities)
1 large egg white, lightly beaten
1 1/2 tbsp sugar
Preheat the oven to 375-400 degrees- know your oven. Mine is on the weaker side so I know to do 400.
In one bowl mix the milk, sugar, vanilla, and egg.
In another bowl, mix flour, baking powder, and salt. Then cut up the COLD butter and use an electric mixer to mix this up. When it is a grainy fine consistency stop mixing.
Slowly add the milk combo to the flour combo, mix again!
Add in your berries when done but do not over blend them in.
Flour a clean surface and dump the dough onto the flour. With your hands, create a round flat dough ball.
Spray nonstick spray on a baking sheet, or I used a large glass pan. Transfer the rounded dough onto the sheet. Use a butter knife to cut the dough into 8-10 even triangular pieces.
Use a brush (or your hands) and glaze the top of the dough with the egg white. Sprinkle sugar on top.
Place in the over for 20-25 minutes. You’ll know they are done when the top starts to brown.
Let them cool for about 15 minutes, cut and serve.
I’m honestly DYING to wake up in the AM and eat these with a large cup of coffee. The scones turned out bomb dot com. They have made my entire house smell like berry goodness. Next time I make these I plan on using chocolate chips, cinnamon chips and the sort. The calorie count will go up, but I imagine it will be worth it!!
