Grilled Shrimp and Kale Salad- 215 Calories!!
This is more so on here because it was delicious, easy, and SO HEALTHY! Not too much cooking involved, actually barely any, and only 215 calories in this incredible salad. I’ve recently had a severe kale obsession, and to be honest, I hope it doesn’t go away. This stuff is like clean fuel for your body. Here’s what you’ll need:
2 cups of kale (I get the organic, cut, and ready to eat kind from Trader Joe’s)
½ of a tomato
¼ of an avocado
1 tablespoon of feta
2-3 tablespoons of balsamic vinegar
First thing I did is cut up the tomato and avocado. Mix this in a bowl with the kale and add in the feta.
Put the shrimp on a pan on medium for about 3-4 minutes on each side. When they have changed color, they are almost done. Hold for 1 more minute.
While you wait for the shrimp, add in the balsamic vinegar to the salad. Top with shrimp and inhale!
Like I said, this salad is less cooking and more healthy, easy, deliciousness. If you don’t like kale, substitute whatever lettuce you like. Add and take out any veggies too.
