20 Minute Dinner: Honey BBQ Shrimp Stir Fry

What an EASY peasy recipe…and delicious mind you. These portions make about 2 servings but you can double or triple based on how many you’re cooking for. Here’s what you’ll need:

1 cup of cooked rice (1/2 cup uncooked)
1 cup of veggies (I used cut up peppers and mushrooms)
~14 shrimp (I put about 7 per serving)
3 tablespoons of your favorite BBQ sauce
1 tablespoon of honey
2 tablespoons of balsamic
1 teaspoon of pepper

First make your rice. While this is boiling, saute your veggies. I honestly only put a little bit of non-stick cooking spray and covered them in a pan on medium-low covered up and mixed them every so often until the rice was almost done.

Mix up the BBQ, honey, and vinegar. Pour it over the veggies and add in the shrimp. The shrimp need about 1-2 minutes of each side. Mix with the veggies and BBQ mixture while you are flipping them. Add in the rice when it is done.

Mix it all really well and set on low for about 3 minutes. When done, add in the pepper. Serve and inhale. This was so delicious!! I was honestly wanting seconds but needed to save the other serving for today!!
